Let’s face it; I love all fish, yes, all fish! So naturally, I spend time trying to figure out new ways to prepare it. This pan-fried version is simple, easy, and so darn good.

Ingredients
- 2 5-7 ounce Salmon Filet Wild Caught
- 2 Tablespoons Butter
- 1 Teaspoon Extra Virgin Olive Oil
- 2 Cloves Garlic minced
- 1 Lemon
- Redmond's Sea Salt to taste
- Fresh Ground Black Pepper to taste

Instructions
- Remove Salmon from packaging and pat dry with a paper towel
- Salt & Pepper Salmon
- Melt butter in a skillet and olive oil, get it pretty hot, then turn to medium to medium high
- Place salmon (flesh down, skin up) in the pan, fry on the first side for 3 minutes, then flip and fry another 2 minutes on the skin side
- Remove Salmon and add garlic, quickly fry, (be sure not to burn), then add lemon juice
- Let this simmer about 30 seconds or so, and add the Salmon back in. Spoon the juice over the salmon and serve immediately

Extra virgin olive oil: Smoke point: 410 degrees F. Use for sautéeing and frying over medium-high heat, and salad dressings.
